Blueberry Compote

Yields: 4 servings


  • 2 cups blueberries (fresh or frozen)

  • 2 tablespoons honey

  • 1 tablespoon orange juice (fresh or store-bought)

  • 1 tablespoon water


  1. Add all the ingredients to a pot.

  2. Stir and bring to a boil for about 5 minutes over high heat. Stir constantly to prevent the mixture from burning.

  3. After 5 minutes or once the mixture comes to a boil, reduce heat to low and let it simmer for 10 minutes.

  4. Take the mixture off of the heat and let it cool and thicken.

  5. Serve warm over pancakes or waffles and enjoy!

  6. Store leftover compote in the fridge and use as a topping for yogurt.
