Cauliflower Rice with Pesto Chicken

Yields: 4 servings


  • 4 chicken breasts (or thighs)

  • 4 cups of cauliflower rice

  • 2 cups of pesto

  • 4 tablespoons of butter

  • Salt & pepper


  1. Combine the cauliflower rice with most of the pesto (save a little for the top of the chicken) and the butter in an oven safe pan.

  2. Season one side of the chicken with salt and pepper.

  3. Place the chicken on top of the cauliflower rice, baste the chicken with remaining pesto, and bake at 325° F until the internal temperature of the chicken is 165°F (somewhere between 45-60 minutes for most chicken breasts).

  4. After it has cooked, remove from oven and let it rest for 5 minutes.

  5. Serve the chicken breast over a serving of cauliflower rice and enjoy!
