Pad Thai Soup

Yields: 8 servings


  • 2 tablespoons of avocado oil

  • 1 tablespoon of sesame oil

  • 1 jalapeno (optional), chopped and seeded

  • 1/4 onion, finely sliced

  • 1 can of no-salt-added crushed tomatoes (32 ounces)

  • 2 tablespoons of soy sauce

  • 1/2 cup of creamy peanut butter

  • 6 oz rice noodles

  • 1 cup of bean sprouts

  • 4 green onions

  • 6 cups of Immune Boosting Chicken Broth

  • 1 pound of uncooked shrimp (or protein of choice)

  • Chopped peanuts (Optional)

  • Lime wedges


  1. In a large pot, heat the avocado and sesame oil over medium heat. Add onion and jalapeno. Cook and stir for 4-6 minutes, or until tender.

  2. Stir in crushed tomatoes, peanut butter, and soy sauce until well incorporated.

  3. Add broth and shrimp. Cook uncovered for 15 minutes until the shrimp is cooked.

  4. Add noodles and salt and pepper. Cook and stir for 4-6 minutes, until noodles are tender.

  5. Top each serving with bean sprout, green onions, and, if desired, chopped peanuts and lime wedges.

  6. Enjoy!
