Parsnip Patties

Yields: 6 patties


  • 3 cups of peeled and shredded parsnips (about 1 pound)

  • 1/2 cup of all purpose flour

  • 1 egg, slightly beaten

  • 1/2 teaspoon of salt

  • 1/2 cup of honey, warmed

  • 3 tablespoons of avocado oil


  1. In a bowl, combine parsnips, egg, flour and salt. Mix well until well incorporated. The batter should be thick and chunky.

  2. Warm avocado oil on a griddle over medium heat and place 1/2 cup drops of batter. Make sure there is enough space between each patty.

  3. Fry over medium heat for 4-5 minutes per side or until vegetables are tender and golden brown.

  4. Place patties on a paper towel and pat to absorb any excess oil.

  5. Serve with warm honey and enjoy!
