Yields: 6 patties
3 cups of peeled and shredded parsnips (about 1 pound)
1/2 cup of all purpose flour
1 egg, slightly beaten
1/2 teaspoon of salt
1/2 cup of honey, warmed
3 tablespoons of avocado oil
In a bowl, combine parsnips, egg, flour and salt. Mix well until well incorporated. The batter should be thick and chunky.
Warm avocado oil on a griddle over medium heat and place 1/2 cup drops of batter. Make sure there is enough space between each patty.
Fry over medium heat for 4-5 minutes per side or until vegetables are tender and golden brown.
Place patties on a paper towel and pat to absorb any excess oil.
Serve with warm honey and enjoy!
