Yields: 4 servings
Ingredients:
4 chicken breasts (or thighs)
4 cups of cauliflower rice
2 cups of pesto
4 tablespoons of butter
Salt & pepper
Instructions:
Combine the cauliflower rice with most of the pesto (save a little for the top of the chicken) and the butter in an oven safe pan.
Season one side of the chicken with salt and pepper.
Place the chicken on top of the cauliflower rice, baste the chicken with remaining pesto, and bake at 325° F until the internal temperature of the chicken is 165°F (somewhere between 45-60 minutes for most chicken breasts).
After it has cooked, remove from oven and let it rest for 5 minutes.
Serve the chicken breast over a serving of cauliflower rice and enjoy!

2 cups of cooked chicken, cubed
1/3 cup chopped celery
1/4 cup of pesto
1 cup mixed greens
1 wrap (any kind you prefer, tortilla, lettuce wrap, sushi wrap, cabbage)
2 tomato slices
1/2 cup of mayonnaise
Salt and pepper
Instructions:
Combine chicken, mayo (to taste), pesto, celery, and salt and pepper in a bowl and mix together.
Lay out wrap and add the tomatoes and mixed greens.
Add the chicken mixture to the wrap, roll and enjoy!

Ingredients:
2 cups of fresh basil leaves (no stems)
2 tablespoons of pine nuts
2 large cloves of garlic
1/2 cup avocado or olive oil
1/2 cup of mozzarella cheese, shredded
Instructions:
Combine basil leaves, pine nuts, and garlic in a food processor or blender. Process or blend until finely minced.
With the machine running on low, add in the oil and process until the mixture is smooth.
Add the mozzarella cheese and process very briefly, just long enough to combine smoothly. Stop the blender to stir as needed.
Refrigerate or freeze in an airtight container.
