Ingredients
2 eggs
2 cups milk of choice
1 cup brown sugar
2 tsp salt
2 tsp baking powder
1 tbsp vanilla
1/3 cup coconut oil, melted
6 cups quick oats
2 apples, diced into small cubes
2 pears, diced into small cubes
1/2 cup pecans
Instructions
Preheat oven to 425 degrees Fahrenheit.
Grease or butter a 9 x 13 pan and set aside.
Whisk eggs and add to apples and pears in a large bowl.
Add brown sugar, pecans, salt, vanilla extract, baking powder, quick oats, milk, and coconut oil to the bowl.
Mix until well combined.
Pour mixture evenly into the pan.
Garnish with apple slices.
Bake in the oven for 45 minutes.
Plate and enjoy!

Ingredients
1 cup of mayonnaise (or Greek yogurt or sour cream)
1/4 cup coconut oil - melted
2 tbsp white wine vinegar
2 tbsp lemon juice
Zest of 1 lemon
1/4 tsp black pepper
2 tbsp honey
1 1/2 cups arugula (or 2 heaping handfuls)
1 lb cooked chicken breast
1 cup honey roasted walnuts
2 to 3 ribs or celery, chopped
1 cup grapes, quartered
1 whole apple, diced into small cubed
Instructions
Combine mayonnaise, lemon juice, pepper, white wine vinegar, honey, and coconut oil in a large bowl. Whisk until the ingredients are well combined.
Add apple, celery, honey roasted walnuts, grapes, chicken, and lemon zest to the bowl. Toss until ingredients are evenly coated with salad dressing
Add arugula to the bowl and toss until evenly incorporated into the mixture.
Plate and enjoy!
